Easy Sheet Pan Italian Sausage and Potatoes

This sheet pan Italian Sausage and Potatoes is simple and delicious. It requires simple ingredients that most of us have in our kitchens at all times and it is delicious. Everything is combined in one pan and cooked together. It takes about an hour and 15 minutes and 60 minutes of that is cooking time. The sausage comes out perfectly cooked and juicy while the potatoes are flavorful and crispy. And, because everything is done in one pan, there is very little cleanup!

For this recipe, I am using Italian sausage and russet potatoes because that is what I had on hand. If you prefer some other sausage or another kind of potato, feel free to use those! First, you will peel and wash the potatoes and cut them into quarters (eighths if you are using the really large baking potatoes). It is best if they are similar in size but this is a rough cut so they will not be exact. Place them on the sheet pan and sprinkle with salt, black pepper, garlic powder, and oregano. Drizzle olive oil on top and mix everything up. Then take your sausage links and cut them in half. Simply arrange them on the baking sheet amongst the potatoes and bake for 1 hour.

I will say that of the 4 spices, the only one that cannot be omitted is the salt. But all of the others are great if you have them. If you are missing one of these, just omit it or substitute with something that you do have. The potatoes will still taste great without oregano. They will taste great if you add parsley instead of oregano. No need to stress about it or make a special run to the grocery store!

Ingredients:

1 package Italian sausage
3lbs russet potatoes (about 10 medium potatoes)
2 teaspoons salt (table salt is always in my kitchen)
1/2 teaspoon ground black pepper
1 1/2 teaspoon garlic powder
2 tablespoons oregano
3 tablespoons extra virgin olive oil

Directions:
  1. Preheat oven to 375 degrees.
  2. Peel and wash the potatoes.
  3. Cut them into quarters. If the potatoes are large baking potatoes, then cut them into eighths.
  4. Place the potatoes onto the baking sheet. Sprinkle salt, black pepper, garlic powder, and oregano on top.
  5. Drizzle olive oil on top. Mix so that potatoes are completely coated by oil and spices. Spread potatoes on sheet so that they are in one layer.
  6. Cut Italian sausage in half and nestle in between potatoes.

  7. Bake for 1 hour. Check to ensure the sausage is cooked to the suggested temperature on the package.
  8. Remove from oven and plate.
