Simple Cabbage Slaw with Vinegar & Oil – No Mayo!

This slaw is our absolute favorite in our home. We make it at least once or twice a week. Here, cabbage is the star! And I have read that cabbage has many health benefits and is loaded with vitamins. In addition to the health benefits, this salad is cheap to make. Cabbage is one of the cheapest (if not the cheapest) item you can get in the produce section of your grocery store. You cannot go wrong with this slaw!

What you will need:

1 head of Cabbage
1/2 teaspoon salt (Remember, you can add more but you can’t take it out – start with less)
2 tablespoons vegetable oil
2 tablespoons vinegar

Directions:

  1. Wash and cut the cabbage into quarters. Cut off the tougher stem at the bottom of each wedge.
  2. Laying each each flat on your cutting board, chop thin slices.
  3. Add chopped cabbage to bowl and add salt, oil, and vinegar.
  4. Toss until cabbage is coated with vinegar and oil. Taste and adjust salt, vinegar & oil as needed. * I had a small head of cabbage but if you have a bigger one, you may need to add a little more salt, vinegar and oil.
